Quality Characteristics

Premium sweet cherries have a bright, shiny appearance with fruit color ranging from dark red, red, or yellow with a red blush. The appearance of the stem, green and free from brown discoloration, is also critical for marketing. Flavor is enhanced by high soluble solids and titratable acid content with a firm, juicy fruit texture. Avoid fruit that is leaky, sticky, and shows signs of decay.

Grade Standard Tolerances

For U.S. No. 1:

Cherries have similar varietal characteristics; are mature, fairly well-colored, well- formed, and clean; and are free from decay, insect larvae or holes caused by them, a soft, overripe, or shriveled appearance, undeveloped doubles, sunscald, and damage by any other cause.

Tolerances for defects at the shipping point stand at 8 percent for cherries which fail to meet the requirements for this grade, provided that included in this amount not more than 4 percent shall be allowed for defects causing serious damage, including in this latter amount not more than one-half of 1 per- cent for cherries which are affected by decay.

Tolerances for defects en route or at destination stand at 12 percent for cherries in any lot which fail to meet the requirements for this grade, provided that included in this amount not more than the following percentages shall be allowed for defects listed: 8 percent for cherries which fail to meet the requirements for this grade because of perma- nent defects; or 6 percent for cherries which are seriously damaged, including therein not more than 4 percent for cherries which are seriously damaged by permanent defects and not more than 2 percent for cherries which are affected by decay.
