Varieties

 

Hayden- is the roundest of the mango varieties. It has a bright yellow-orange flesh, firm texture, and flat, oval pit.

 

Kent- is an oval-shaped mango that is softer than other varieties. Its fiber-free flesh is sweet with a tropical flavor.

 

Tommy Atkins- is the most colorful mango, distinguished by its firm skin and medium fiber. It is shaped like a Haden but contains less flavor.

 

Keitt- is the largest mango variety. Un- like other varieties, it may remain totally green with just a hint of yellow even when fully ripe.

 

Francisque- is a medium-size, flat mango from Haiti with an apricot-like flavor. Its color ranges from a deep orange to completely green.

 

Van Dyke- is a small mango with pineapple-like flavor.

 

Ataulfo- is another small mango. It is very sweet, rich in flavor, and virtually fiber-free.

Compatibility

From USDA Handbook No. 669, load compatibility Group 2. Mangos are com- patible with avocados, bananas, eggplants, grapefruit, guava, limes, muskmelons (other than cantaloupes), olives, papayas, pineapples, tomatoes, and watermelons.

 

Temperature

USDA recommended storage 55° F (12.8° C).

Approximate freezing point 30.3° F (-0.9° C).

At the above temperatures, mangos should keep for two to three weeks. Some varieties may be successfully stored at 50° F (10.0° C); however, shippers’ instruc- tions should be followed, as most varieties are susceptible to chilling injury at temperatures below 55° F (12.8° C).

Fully ripe mangos may be successfully stored at temperatures near 40° F (4.4° C). To ripen mangos, temperatures of 70°-75° F (21°-24° C) are best. Higher temperatures may affect flavor, while lower temper- atures may result in a tart, sour flavor.

• 8% serious and

4% decay upon arrival at contract destination after five-days in transit.

Recommended transit temperature is 55° F.
