Plantain should have a minimum length of 22 cm (9 inches), and be free from mechanical damage, scars, insect damage, disease, and chemical residues.
Maturity can be judged by the angular- ity of the fingers. Plantains are harvested mature green and may or may not be ripened upon arrival at destination markets, since plantains are eaten at all stages of ripeness (green through black). A mature, green fresh cluster has a brilliant clean appearance, stalks which are firm and can still support fingers in an erect position, and a shaft which shows a white or whitish-colored humid wound when it
is cut.
